I just moved, and I am tight on cash. What can I make for lunches and dinners with the food I have, buying as few new items as possible?
Two notes:
1) I have a pot, a frying pan, and a microwave pot. Can’t do crock-pot meals or anything like that.
2) I am in the process of becoming a vegan, so while I will eat the dairy I have so it gets used, I will not buy any new dairy items.
Here is what I have:
"Pantry":
Instant oatmeal
Wide noodles
Kraft Mac and Cheese
Instant brown rice
A small amount of regular white rice
Slivered almonds
Kalamata olives
Tofu
Penne
Spaghetti
Kidney beans
Kombu (a seaweed)
Refrigerator/Freezer:
Edamame
Tofu
Cottage cheese
Hard-boiled eggs
Butter
Soy milk
Almond milk
Oat milk
Spaghetti sauce
Soy sauce
Fresh:
Eggplant
Squash
Red bell pepper
Sweet potatoes
Onion
Garlic
In addition, I have a decent amount of spices and herbs, oil and vinegar, and baking needs.

The Vegetarian Times magazine site has a section in it’s cooking/recipe section in which you can select your ingredients on hand for recipes.
Onion + garlic + tofu + rice + whatever veggie you would prefer + soy sauce = simple/easy stirfry.
make like a tofu stir fry with rice on the side! yum!
allrecipes has good stuff!
or make a pasta dish with vegetable and garlic sauce!
